OBSERVATION: Gives 25% more foam and 5 times more stability of fresh egg whites ELABORATIONS: Meringue / Macarons /Marshmallows / souffle / Sponge cakes/ mousse/ cocktails/ Drinks The meringue can be re-mounted as many times as necessary in any recipe containing water.
